We’ve rounded up some delicious cookie recipes that feature a sprinkling of fresh herbs you can easily grow in your smart garden. Have fun baking these and be inspired to create some of your own recipes too! 


1. Ginger Rosemary Shortbread Cookies


You’ve heard of gingerbread at Christmas but what about ginger rosemary shortbread? These are well worth the time it takes to make them. They’re light and delicate and go very well with a cup of coffee or tea.

Ingredients:


  • 1 cup unsalted butter, softened (2 sticks)
  • ¼ cup pure maple syrup
  • ½ cup powdered sugar
  • 2 cups unbleached all-purpose flour
  • ½ teaspoon kosher salt
  • 1 teaspoon ground ginger
  • 1 tablespoon fresh rosemary, finely chopped
  • ½ cup granulated sugar
  • ½ tablespoon fresh ginger, grated

2. Meyer-Lemon Shortbread Wreath Cookies


Use your homegrown thyme and rosemary for this delicious recipe. In addition to their sweet flavour, these cookies will also look amazing on your holiday table. Great for when you have the family coming over to visit.

Ingredients:


  • 2 sticks unsalted butter, room temperature
  • 1 tablespoon packed finely grated Meyer-lemon zest, plus 2 tablespoons fresh juice (from 2 lemons)
  • 3/4 cup confectioners' sugar
  • 1 1/4 teaspoons kosher salt
  • 2 cups unbleached all-purpose flour, plus more for dusting
  • 60 sprigs (each about 1 inch long) fresh thyme or rosemary, or a combination
  • 1 large egg white, beaten
  • Granulated sugar, for sprinkling
  • 3/4 cup plus 2 tablespoons confectioners' sugar
  • 3 tablespoons fresh Meyer-lemon juice
  • Small red, white, and green candies, such as nonpareils and pearls

3. Cinnamon Basil Cookies


When your Christmas meal is over, enjoy these cinnamon basil cookies with herbal tea. Their flavour is slightly zesty with a hint of spice. Your homegrown cinnamon basil will add some warm, herbaceous tones to this dessert.

2 cups all purpose flour

1/2 tsp. baking powder

1/2 tsp. salt

2/3 cup butter (see my note about this below)

1 cup sugar

1 large egg

1 tsp. vanilla extract

1 tbsp. lime zest

3 tbsp. chopped fresh cinnamon basil

4. Chocolate Chip Cookies with Thyme Infused Browned Butter


Who doesn’t enjoy choc chip cookies? This classic comes with a herbal twist: thyme infused brown butter. These cookies are chunky, satisfying, and popular for all ages. Remember to keep some aside for yourself before they’re all gone!

Ingredients:


  • 1 cup (126 g) AP flour
  • 3/4 cup (96 g) white whole wheat flour
  • 1/2 t baking soda
  • 1 t salt
  • 14 T (1 3/4 sticks) unsalted butter
  • 4-6 sprigs (less for longer more for shorter) of thyme
  • 1/2 cup white sugar
  • 3/4 cup packed light brown sugar
  • 2 t vanilla
  • 1 T molasses
  • 1 large egg
  • 1 large egg yolk
  • 1 1/4 cups chocolate chips
  • coarse or flaky sea salt for sprinkling
